Christmas Pavlova Wreath

If you live in Ukraine, I am sure that you have often visited chain stores Promenu, stores with the world best tableware and cookware. Yes, the best in the world, you heard right 😊 Once upon a time I spent more than 10 years of my life being a part of a team gathering around the world the best brands of tableware and cookware, so they could be found on the shelves of this stores chain for you! And not only on the shelves, but I believe, and in your hands too. For example, at our master classes or when you just went to the store to cheer yourself up or in your own kitchen. I’ll tell you a secret, I envy you a little, because you can always buy something there, but I cant’t 😊 The weight of my luggage from Odessa to London is always limited! But I like to work among beautiful and bright tableware, that turn routine into joy, and any meal becomes a holiday 😊 This Christmas I spent in Odessa and held several master classes in Promenu chain stores. Before the holidays, we are often in search of recipes for dish that will become the centrepiece and will delight our guests. Therefore, the theme for the master class was the English Christmas cake “Christmas Wreath Pavlova”. Pavlova is a light, delicate dessert, named and created in honour of the ballerina Anna Pavlova. At Christmas, it is baked in the shape of a Christmas wreath. Preparing a meringue without a good mixer is difficult. My favourite planetary mixer KitchenAid was at my disposal during the lesson, with it any difficult task becomes simple. The basis of Pavlova is meringue and cream, but the filling can be completely different and vary depending on the season. In addition to the classic version with fresh berries and mint, we baked Pavlova with dates, oranges and caramel thread, combining in it the traditional ingredients of Christmas sweets. Sommelier Konstantin Vidoborenko gave individual recommendations on wine pairings for the festive table, and for our dessert offered sparkling wine Brachetto d’Acqui Braida Giacomo Bologna, which the winemaker himself calls the perfect pair for Pavlova. I hope this airy, light and beautiful dessert was the perfection of our guests’ Christmas dinners.
