Lesson “Tarte Tatin in Promenu”
One of the best tableware chain stores – Promenu, which includes 26 stores across Ukraine, invited us to conduct a series of cooking master classes. Clients of the network are people who like to cook with the help of beautiful, high-quality and convenient cookware. Very often there are new items from the world of tableware and cookware in the stores, and it’s not always easy to understand how they work without the help of professionals. During the second lesson, we learned how to cook Tatin sisters’ pastry with pear and Roquefort cheese. This recipe we learnt from Emile Henry, ceramic manufacturer from Burgundy. They have a special form for tarte Tatin that we used in our lesson. Chef Vadim Chevganiuk showed us how to make Breton biscuit, how to chop pears for tart Tatin, so that they retain their shape, how to make caramel. All the participants enjoyed the unusual tarte Tatin paired with Sauternes 2009 Carmes de Rieussec wine, which Konstantin Vidoborenko picked for the wine tasting. On this day, all the guests of the lesson discovered a new taste of the classic dessert and learned the trick how to easily turn the tart Tatin so it doesn’t break when it’s cooked in the Emile Henry set. Indeed, in Promenu they not only sell goods, but also gift new knowledge and delicious emotions.
