Ingredients
- 5 tomatoes of different colours
- 2 balls of mozzarella
- 1 basil sprig
- olive oil
- freshly ground black pepper
- sea salt
Cooking method
Step 1
Cut tomatoes and mozzarella into thin slices of equal sizes. Alternating the layers put the tomato and mozzarella circles on the serving dish, to make four mille-feuilles. Make it so that in each mille-feuille there are tomatoes of different colours. Drizzle with olive oil. Sprinkle with salt and pepper. Garnish with basil leaves and serve.

The taste of this dish is incredibly light and delicate. It is very important to use high quality olive oil labelled Extra Virgin Olive Oil for it. And if you would like to add a brighter flavour to it, drizzle the mille-feuille with balsamic vinegar from Modena or balsamic cream sauce. Tomatoes and balsamic are the perfect time-tested alliance.
