Before I moved to England and went to my first British Christmas dinner, I never knew that parsnip could be so delicious. The British have discovered it long ago, and in any store, they buy it in the same quantity as carrots or potatoes. Here it is very easy to find it as a side dish, in soups or even desserts. I would like for this wonderful vegetable to also appear on your menu.

Ingredients

  • 8 medium parsnips
  • 80 g butter
  • 6 tbsp oil
  • 4 tbsp honey
  • freshly ground black pepper
  • sea salt

Heat oven to 180˚C. Peel the parsnips and cut them in half lengthways, then cut them into quarters again. Drizzle with oil, season with salt and a lot of pepper. Stir well and transfer to a baking dish. Drizzle the parsnips with honey and add finely chopped butter. Bake in the oven for 40 minutes. Stir and serve.
