Belgian chocolate waffles

Ingredients
  • 110 g flour
  • 50 g dark chocolate
  • 125 ml whole milk
  • 130 g butter, room temperature
  • 50 g sugar
  • 2 g salt
  • 3 egg whites
Cooking method
  1. Sift flour into a large bowl. Melt the chocolate in a bain-marie. Pour milk into a saucepan and put on low heat. Heat the milk to about 40°C. Remove from heat. Add butter, sugar, salt, and vanilla. Stir gently until the butter melts. Pour the mixture into chocolate, add the flour and stir with a spatula until smooth. Whisk the egg whites until they form stiff peaks. Carefully fold in the whites into the batter.
  2. Heat the waffle maker. Pour the batter into a measuring jug. Fill the waffle maker with the batter, pouring it in the centre of the mould so that it is evenly distributed after the lid is closed. Cook the waffles for 3-4 minutes. Transfer the waffles to cool on the cooling rack.
My tips and tricks
I think that it is as important for you, as it is for me, that the waffles are crunchy. You take them out crunchy from a waffle maker, put them on top of each other to cool, and they suddenly become soft. To prevent this from happening, find a place for the cooling rack in your kitchen cabinet. A simple and necessary item, it is very convenient to cool any pastries or bread on it, or when icing the cakes. Remember, organizing a workplace is 50% of your culinary creativity success :)
