Timut pepper gelato

Ingredients
  • 250 ml double cream
  • 250 ml whole milk
  • 150 g sugar
  • 5 egg yolks
  • 2 tsp lavender extract paste Taylor&Colledge
Cooking method
  1. In a bowl, whisk all the ingredients, except for pepper, together to an even mass or use a mixer at low speed.
  2. Pour the mixture into an ice cream maker. Start the process. After 30 minutes add the timut pepper to the gelato. In another 10 minutes, the gelato is ready.
My tips and tricks
Cream, milk, sugar, and egg yolks are the classic Italian ingredients for creamy gelato. You can reimagine it with any tastes and aromas you like by adding aromatic essence, fruit purees, spices, or your favourite liqueur.
