Ingredients
  • 8 medium parsnips
  • 80 g butter
  • 6 tbsp oil
  • 4 tbsp honey
  • freshly ground black pepper
  • sea salt
Cooking method
  1. Heat oven to 180˚C. Peel the parsnips and cut them in half lengthways, then cut them into quarters again. Drizzle with oil, season with salt and a lot of pepper. Stir well and transfer to a baking dish. Drizzle the parsnips with honey and add finely chopped butter. Bake in the oven for 40 minutes. Stir and serve.
My tips and tricks
Here's a simple secret on how to make a delicious soup from baked parsnips. Bake a lot of parsnips at once. Part of it will be a side dish: it is an excellent substitute for potatoes. And from the second part, make a delicious puree soup. To do this, transfer the baked parsnip to a saucepan, add milk approximately equal in volume to the parsnip, bring to boil and let it simmer for 5-10 minutes over low heat. Then using a blender to bring the soup to a smooth consistency and add a little salt. Warm winter soup is ready!
