Here's a simple secret on how to make a delicious soup from baked parsnips. Bake a lot of parsnips at once. Part of it will be a side dish: it is an excellent substitute for potatoes. And from the second part, make a delicious puree soup. To do this, transfer the baked parsnip to a saucepan, add milk approximately equal in volume to the parsnip, bring to boil and let it simmer for 5-10 minutes over low heat.
